So easy to make: just cook the quinoa like you would with rice, chop up some bell peppers, throw in a bit of goat cheese, and add in roasted kale! To roast the kale just put olive oil on the stove, some minced garlic, and lots of kale! After you put everything together in a large bowl, add in a squeeze of lemon juice (for vitamin c), and a bit of olive oil for taste. (Also, olive oil is so good for helping your body absorb your omega-3s!) For a lunch option, add salmon pieces to your salad and enjoy!
